The Quickest and The Healthiest Pizza Ever

Honestly…who doesn’t like pizza? This absolute comfort in the food that cure even the worst day. Cooked in 15 minutes, delicious and even more enjoyable when you know you’re actually eating something healthy and not fatty and oily delivered sh**.


Ingredients:

Dough:

  • 1/2 cup wholemeal flour
  • 1/4 cup water
  • pinch of salt
  • Mediterranean spices

 

Toppings:

  • tomato puree
  • 1 small fresh tomato
  • 1 small handful spinach
  • 10g cheese (I had some leftovers of Parmesan)
  • oregano/pizza spices
  • 1 egg

Instructions:

Preheat the oven to 200ºC. Combine the flour, spices, salt and water in the bowl and form a bun like it’s shown on the pictures below.

Flatten the bun in the shape of an American pancake. Approximately 0,5cm thick.

Spread a table spoon of tomato puree on the top of the “pancake”.

Top up with spinach, tomato and cheese.

Bake for approximately 5 minutes so the cheese starts to melt.

After 5 minutes take the pizza out, move the spinach and tomato slightly on the side of the pizza to form a “pool” for the egg. Crack over the egg, sprinkle with some pizza spices and bake for another 5 minutes or until the egg is baked through.

Eat alone as a snack or serve with the salad and some beans on the side and there you have… a real lunch.
