A light dish, rich in protein which seems way more complicated and fancy than it actually is. This recipe is appropriate for two portions.
But without much talking let’s go to the recipe. 😛
- 200g white potatoes
- 100g asparagus
- 2 shallot onions (chopped)
- 4 eggs
- 100g low fat quark
- 40g parmesan cheese
- Coconut oil
- Oregano or other Mediterranean spices
Peel the potatoes, cut them into small cubes, put them in the cold salted water and bring them to the boil. Meanwhile, heat the oven to 200°C. Once potatoes are cooked, but still compact, drain them and save for later.
In a separate bowl, whisk the eggs, quark and half of the parmesan cheese. Add a pinch of salt, pepper and other spices.
Heat drizzle of oil in a pan, and fry asparagus for about 5 minutes. Turn them around couple of times. Then, remove them and in the same pan, fry finely chopped onion. Once they’re fried remove a pan from the fire. Add potatoes and gently mix all together. On the top pour the egg mixture and again gently mix.
If you have an ovenproof pan than just put it in the oven or pour the mixture in the appropriate dish for baking. On the top lay the asparagus and sprinkle with the rest of parmesan cheese. Bake for about 10-15 minutes or until bake through.
To add a little freshness and some more fibre serve with a large portion of green salad with fresh tomatoes.
